MY VERY Nigerian JAMBALAYA RICE.

Have you ever heard of this statement? – The food you don’t make appropriate preparation for ends up being the best and most tasty! That is the case of this JAMBALAYA RICE.

This recipe was unplanned! But in a way, the unplanned food comes out the best😂. And you keep craving for more.

I prepared this jambalaya rice using leftover white rice from the previous night. Jambalaya rice is similar to Jollof rice but it tastes absolutely different from it. It is prepared using different proteins of choice and vegetables.

I was skeptical about using goat meat for this recipe because jambalaya rice is popularly prepared with chicken, shrimps, or any seafood of choice. But using goat meat was the best decision ever.

The feedback I got from people after they tasted this rice was massive. Then I said to myself “This recipe must make it to the blog”.

I’m looking for the right word to make emphasis on the taste of this jambalaya rice. But I can’t find it. All I can say is that this rice was amazinnnnnnnnnnngggggg!!!!!. You should give it a try.

I heard JAMBALAYA RICE is a popular American dish with African, Spanish, and French influence. As a Naija babe, I decided to come up with my VERY NIGERIAN JAMBALAYA RICE RECIPE. This recipe is the Nigerian version😂.

You need a long list of ingredients to prepare this. But it is absolutely worth it!

INGREDIENTS

2 tablespoon of vegetable oil

1 teaspoon of black pepper

2 tablespoon of tomato paste

5 tablespoons of blended pepper

2 chopped tomatoes

1 chopped red bell pepper(tatashe)

1 chopped green bell pepper

1/2 chopped onion

3 Chicken Sausages or Hot dog

Chopped goat meat (Any meat of choice)

Beef broth (Omi Eran)

Rice (Precooked or Raw)

Salt, Maggi, thyme, and curry

Bay leaf.

Note: All ingredients are dependent on the quantity of your rice.

Jambalaya rice

Let’s cook!

Prepare all your ingredients.

Cook the rice plainly with salt and drain. (If you are using precooked rice).

In a pan/ skillet/pot, add 2 tablespoons of oil and fry the sausages and meat. Stir it continuously and fry for about 5minutes. Transfer to a plate and set aside.

Feel free to add shrimps or any seafood at this point. Fry it with the sausages and meat.

Pour the chopped onions into the pan and stir continuously. Fry for about 2minutes till translucent.

Pour the tomato paste into the oil and fry it for about 3minutes. Then add the blended pepper, bay leaf, seasonings, chopped tomatoes, and peppers (all your spice). Transfer the meat broth into the pan. Cover the pan and allow it to cook.

NOTE: Be careful when adding your spice. Consider the beef broth when adding the spices.

After frying the pepper sauce. Transfer the rice, sausages, and meat into the pot. Mix the rice with the sauce. Sprinkle a little bit of water in the rice and cover. (You do not want your rice to be too dry).

Reduce the heat from the burner to the minimum and allow to steam. Open the pan and mix it again. Then cover to steam for an extra 5mins.

Alternatively, (you can use raw rice).

After preparing the pepper sauce. Wash your rice (raw rice) and transfer it into the pan. Add your protein of choice and add enough water to cook the rice.

I sprinkled some freshly chopped scent leaf on my rice after cooking.
